Tasty Thursday!

I found a recipe a couple of years ago for Chocolate Chip Zucchini Bread.  I adapted it to make them into cookies.  This year I have had an abundance of zucchini so I made some.  They are soft and delicious!!  Enjoy this recipe...it makes a ton of cookies so share with friends!  I suppose you could 1/2 it but I make the whole thing and freeze the dough for later use.  It will make about 7 dozen cookies and it is easy!

Ingredients:
1 cup butter softened
2 cups sugar
2 eggs beaten
4 cups AP flour
2 tsp baking soda(yes, soda)
2 tsp cinnamon
1 tsp salt
2 cups grated zucchini
2 cups chocolate chips

-Heat oven to 350 and spray the cookie sheets with spray or line with parchment paper.  They will stick a little either way.
-Cream the butter and sugar until creamy and fluffy.  I used my Kitchen Aid
-Add the egg, flour, baking soda, cinnamon, and salt and mix.  The dough will be thick so at the end you will need to do it by hand.  My Kitchen Aid struggled.
-Stir in the zucchini and chocolate.
-Drop spoonfuls of dough onto greased cookie sheets and bake for about 12 minutes.

They will keep for about a week, sealed or in a container.  Enjoy these and know that no one will know that there is zucchini in there unless you tell them!

Christmas 2011(tons of pictures)

This Christmas has been great so far. We have enjoyed time as a family as well as serving other families. I have the best kids ever and they have taken this spirit of Christmas thing to the limit and then surpassed it. They have such generous hearts and love for their fellow man. Here are some pictures to show you how we have been celebrating.........

The kids were told to get in their PJs and get in the van.

And we went out looking for lights.

This was by far the neatest display we have seen!  The lights went about 80-100 ft in the air and came straight down.  It was beautiful and eerie at the same time!

Transparent Thursday(A Day Late)

I confess that I am a day late this week! I have had such a hectic week with work and softball.
But confession is good for the soul so here is 1 from Caren with a "C"

I sometimes eat the last cookie. You can't really split it 4 ways, right?

I have done that to maintain the peace in my household so I feel you, Caren!

I love March Madness! Basketball season is great! I watch all the games, if I can. I fill out a bracket and compete with others and yes I want to win! I am not a blind follower. I love my Tar Heels but they are not going to win it all so I filled out my bracket accordingly. If they win the championship, I will be surprised and happy. If they don't, I won't be surprised and hopefully my bracket will win!

Dust bunnies do not exist in my house! Dust monsters do! I could dust every day and still have dust everywhere!

People surprise me! Those who are supposed to have feelings for me, don't and those who don't, do! I just don't understand! I am constantly seeking for someone(in particular) to love me but I am always rejected! I think though that I want that person to feel rejection just as painfully as I do. That is not a Christian attitude!
